I have a POST of form data, but depending on how I enter the key pair, Appsmith will change some characters.

Could you please share your app with us (invite support@appsmith.com as developer), to take a closer look at what’s happening? If not can you record a loom video explaining the expected vs actual behaviour.

Short version is in the post data, t:variables is being corrupted with Unicode unknown characters, but test is not.
